Anytime I make mashed potatoes, I always make a few extra so that I can use them for this recipe. Having grown up with perogies, these potato cakes are especially good with sour cream and chopped green onions. It’s a great way to use up your leftovers, and they are usually a big hit with kids.
First, heat up a pan on medium heat with a little bit of butter or oil. Then take your mashed potatoes, and mix in whatever spices you like. We usually add garlic powder, salt (depending on how much you used to make the potatoes – adjust accordingly), pepper and a bit of paprika.
Form the mashed potatoes into patties. They will be a little loose, so you will need to space them far enough apart so that you can turn them easily. Fry them for about 3-5 minutes on one side, then flip to the other side carefully.
Once they are flipped, let them cook for another 3-5 minutes, and then you are all set! Serve with ketchup, sour cream and garnish with onions if you like.
