I recently made this pie – Strawberries were on sale for $1.67 for organic (which is an unheard of price!) so I stocked up and bought 4 pints. My mom used to make this pie when we were young, and I loved it. So I decided to try it for the first time. It turned out great!
You can use whatever crust you like – for this one, I used a graham cracker crust, but you can use a regular pie crust (homemade or store bought) if you like. Wash and slice strawberries to fill the pie crust until it has a ‘mound of strawberries’ in it.
Once you have the strawberries situated, combine in a saucepan:
3 tablespoons cornstarch
1 cup sugar
1 1/2 cups water
Stir constantly until thickened and Jello is dissolved, and then pour over the strawberries. Chill for 3 hours, or until set. Here is what it will look like – check out the incredible sheen on the strawberries! Enjoy!
